Capacity is a physical fact, not a commercial claim.
Any operator can bid a volume. Only an operator with the plant behind it can serve that volume on day one and hold it in month thirty. Our production, storage and distribution assets are owned, registered and available for client inspection before award.
- 2 central kitchens
- Temperature-controlled distribution
- Open to client inspection
Designed to a load calculation.
A central kitchen is a production facility. It has a throughput ceiling, a bottleneck station, a utility load and a contamination risk profile, all of which are calculable before a single brick is laid. We size ours with deliberate headroom so that contracted volume never sits at the design limit.
One direction only, from goods-in to despatch.
Cross-contamination is prevented by layout before it is prevented by cleaning. Material moves forward through the facility and never returns to a cleaner zone.
What we own and operate.
Six asset classes, each with a maintenance, calibration and sanitation programme attached.
Facility standards applied across the network.
Indicative values. Facility-specific specifications are issued during technical evaluation.
| System | Standard applied | Verification |
|---|---|---|
| Zoning & layout | Segregated raw, semi-processed and finished zones with unidirectional flow | Layout drawing, internal audit |
| Bulk cooking | Steam-jacketed vessels and tilting bratt pans with batch temperature recording | Production record per batch |
| Rapid chilling | Blast chill from 70 °C to 4 °C within 90 minutes | Chiller data log |
| Cold storage | Temperature-mapped chambers with continuous logging and alarmed excursions | Continuous data log, mapping report |
| Water | Treated potable supply, periodically tested for microbiological compliance | Laboratory test certificate |
| Hot transit | Insulated hot-box carriage holding above 65 °C to point of service | Despatch and receipt temperature log |
| Cold transit | Refrigerated carriage holding at or below 5 °C to point of service | Vehicle data log |
| Waste | Segregated wet and dry streams with authorised disposal and recovery routes | Disposal manifest |
| Pest management | Contracted programme with monitored stations and trend analysis | Service report, trend review |
| Equipment calibration | Probes, scales and chart recorders calibrated on a scheduled cycle | Calibration certificate register |
If it is not recorded, it did not happen.
Indent, production, despatch, receipt and consumption are captured digitally and reconciled. Clients receive a verifiable view of every meal cycle against contracted service levels, not a monthly assurance that things went well.
- Digital indenting against approved cyclic menus and confirmed headcount.
- Production dashboards showing batch status, yields and control point readings.
- GPS-tracked despatch with time-and-temperature captured at both ends of the route.
- Consumption reconciliation and SLA reporting issued monthly for client review.
Come and inspect the plant.
We encourage facility visits during technical evaluation. Asset registers, licences, calibration records and audit reports are made available in advance.
